For The Love of Pancakes

Breakfast can get quite hectic in our family, especially when no one can seem to agree on what’s on the menu. But the one thing we can definitely agree on is our love for PANCAKES! Having tried a dozen of recipes, I have finally landed on one that really hits the spot. The soft and fluffiness of this pancake is such a dream. This recipe is so easy to make that you’ll charm the pants off of anyone.

1 ½ cup of flour,

2 tsp of baking powder

½ tsp salt

1 ÂĽ tbsp sugar

3 eggs

1 cup of cream cheese

1 Âľ cup of milk

1 tsp lemon essence

1 tsp lemon zest

3 tbsp melted butter

1 cup of fresh blueberries.


In a large bowl, whisk together the flour, sugar, baking powder and salt. Set aside.

In a separate bowl, whisk together the eggs and cream cheese till it’s well combined.

Add in the milk, lemon essence and zest. Combine until a smooth texture is created.

In thirds, combine the flour mixture into the egg and cream mixture. Mixing them gently until they are well combined.

Lastly, pour in the melted butter. Make sure that the butter is nicely melted without any lumps left. Whisk them together one more time and set them aside.

Heat up your non-stick griddle and you’re ready to make these wonderful pancakes.

To ensure that every pancake gets the same amount of blueberries, what you want to do is at every scoop of pancake batter; add on top 5-6 blueberries while the batter is slowly cooking on the griddle.

Once both sides are cooked, you are ready to serve up some yummy breakfast food!
